Homemade minestrone soup can be ready in minutes on a chilly day. Just simmer for 10 minutes to cook the macaroni and soup is done.

Ingredients

1 yellow bell pepper, diced

2 cans (14.5 oz. each) Del Monte® Original Recipe Stewed Tomatoes, not drained

1 can (14.5 oz.) Del Monte® Cut Green Beans, drained

1 can (14.5 oz.) College Inn® Chicken Broth 

1 can (15 oz.) navy beans, rinsed and drained

2/3 cup (2 oz.) dry macaroni

Salt and black pepper, optional

1 Tbsp. finely chopped fresh parsley, optional

Directions
  1. Combine all ingredients in a large saucepan.
  2. Bring to a boil over high heat; reduce heat to medium-low.
  3. Cover and simmer 10 minutes or until pasta is tender. Season to taste with salt and pepper and sprinkle with parsley, if desired.
