Tuscan Turkey Soup

While it may sound a little unusual, the pumpkin makes this soup simply sublime. When combined with turkey, beans and basil, it creates a symphony of flavors that kids of all ages will enjoy. The best part of this one-pot wonder is that it makes enough for lunch or dinner the next day too!

Ingredients

2 cans College Inn® Chicken Broth 

1 cup chopped onion 

1 cup chopped celery 

2 Tbsp. olive oil 

1 tsp. minced garlic 

2 cups cubed cooked turkey 

1 can solid-pack pumpkin 

1 can white kidney beans or cannellini beans, rinsed and drained 

1/2 tsp. salt 

1/2 tsp. dried basil 

1/4 tsp. pepper 

grated Parmesan cheese

Directions
  1. Saute onion and celery in oil in a large saucepan until tender.
  2. Add garlic; cook 1 minute longer.
  3. Stir in broth, turkey, pumpkin, beans, salt, basil and pepper. Bring to a boil.
  4. Reduce heat; simmer, uncovered, for 10-15 minutes or until heated through, stirring occasionally.
  5. Serve with cheese, if desired.
