Banh Mi Sandwich

Day 2 of our planned-over meal is a quick and delicous weeknight dinner. Day 1 is Asian Pot Roast.

Ingredients

  • 3/4 cup shredded carrots
  • 3/4 cup julienned cucumber
  • 1/2 to 1 jalapeno, seeded and thinly sliced
  • 1/2 cup torn fresh cilantro leaves
  • 2 Tbsp. torn fresh mint leaves
  • 2 Tbsp. rice or white vinegar
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • reserved cooked meat and sauce
  • baguette or French rolls

Directions

  1. Combine vegetables, herbs, vinegar and seasonings in a bowl; mix well.
  2. Thinly slice reserved cooked meat. For a hot sandwich, reheat meat in reserved sauce.
  3. To serve, fill sliced bread with sliced meat and salad.
